Description
Vinification Methods: Generally, Petit Chablis parcels are harvested during the second half of the harvest in order to give the grapes an extra time to mature.
Once the juices are in stainless steel tanks, they first go through 100% alcoholic fermentation activated with natural yeast during 15 to18 days at low temperature (18°C) then through 100% malo- lactic fermentation thanks to natural bacteria at 20°C for a few months.
Aging Methods: After a racking manipulation to take out the gross lees, the wine ages in tank for at least 4 months and then it is fined before a cold filtration and bottling. This last part is done tank by tank, as soon as the bottles are sold, the rest of the wine remaining in tank. The objective is to maximise the freshness and fruitiness of this Petit Chablis.
Tasting notes: Petit Chablis is a fresh and very aromatic wine. Its fruity nose car- ries a suggestion of apple and citrus notes. In the mouth, a nice gustatory attack is combined with a round and fine palate.
