Description
Winemaking: Only the best Cabernet and Sangiovese grapes are selected during the harvest and destined to Perpiero’s blend. All grapes are manually harvested, once they reach the perfect phenolic maturation, and separately vinified. The fermenting juice undergoes a prolonged temperature-controlled maceration in staineless steel tanks, with frequent punch down to ensure an intense colour extraction, complexity and soft tannins. Once the fermentation is over the wine is racked into our ageing barrel cellar. Cabernet Sauvignon and Cabernet Franc are aged for one year in new French oak barriques while the Sangiovese is aged 12 months in 15 hl French oak barrels. Our winemaking team carefully craft the final blend, prior to 12 further months of ageing in second-fill French barriques. The wine ages a further 4 months in the bottle before being released.
Tasting Notes: The colour is an intense, lively ruby with purple hues. Youthful bouquet aromas of black cherry, blueberry and black currant with a delicate Mediterranean scrub and a stylish coating of cinnamon and vanilla. Intense, full bodied on the palate, with a main character of sweet berry flavours. Velvety and elegant tannins, followed by a long, complex persistency.
